Instructions
  1. Preheat toaster oven to 375 (bake setting).
  2. Place butter in a medium microwavable mixing bowl. Microwave butter for 30 seconds, or until half melted.
  3. Add sugar, and mix until sugar is fully incorporated in the butter. Add the egg and whisk until fluffy.
  4. Stir in the half and half, pumpkin, and spices.
  5. Add the flour, baking soda, and salt to the bowl. Mix until a slightly lumpy batter is formed.
  6. Spray your pie dish with non-stick spray. I use an olive oil spray. Pour the batter in the pie dish.
  7. Bake for 20 minutes.

Banana Bread CoffeeCakePie

This is a one-bowl, pie dish, toaster oven recipe. I like to use whole wheat flour, but it will work with all-purpose or “white whole wheat” flour too. This is any easy way to use up a couple over-ripe bananas.

  1. Preheat toaster oven to 375 (bake setting).
  2. Place butter in a medium microwavable mixing bowl. Microwave butter for 30 seconds, or until half melted.
  3. Add sugar, and mix until sugar is fully incorporated in the butter. Add bananas and mash the bananas in the bowl next to the butter/sugar. Add the egg and slightly beat it. Mix all the ingredients.
  4. Add the flour to the bowl. Add the baking soda and salt on top of the flour. Add the vanilla (I do this now so that I don't get the 1/4 tsp spoon wet). Mix all the ingredients together. A lumpy batter is just fine.
  5. Spray your pie dish with non-stick spray. I use an olive oil spray. Pour the batter in the pie dish.
  6. Bake for 20 minutes.
