I like my brownies somewhere between cake-like and fudgy. This seems to do the trick.
        Ingredients    
                - 5 tbsp butter
 - 3/4 cup sugar
 - 2 eggs
 - 2 tsp espresso powder or Starbucks Via
 - 1 tsp vanilla extract
 - 1/3 cup cocoa powder dutch process
 - 1/3 cup milk
 - 2/3 cup all purpose flour
 - 1/4 tsp baking powder
 - 1/2 tsp kosher salt
 - 1/4 cup semi-sweet chocolate chips
 
        
    Servings: wedges
    
                
        Instructions    
                - Preheat toaster oven to 350 (bake setting).
 - Place butter in a medium microwavable mixing bowl. Microwave butter for 30 seconds, or until half melted.
 - Add sugar, and mix until sugar is fully incorporated in the butter. Add the eggs and whisk until fluffy.
 - Mix in the espresso powder, vanilla extract, and cocoa powder. Then mix in the milk.
 - Add the flour, baking powder, and salt to the bowl. Mix until a smooth batter is formed.
 - Mix in the chocolate chips.
 - Spray your pie dish with non-stick spray. I use an olive oil spray. Pour the batter in the pie dish.
 - Bake for 25 minutes.
